Ingredients

  • 500 ml whole milk
  • cup rooh afza (rose syrup)
  • 2 tablespoon sugar adjust to taste
  • 1 cup watermelon juice (simply blend fresh watermelon)
  • ¾ cup watermelon cubes
  • 1 tablespoon rose water
  • edible rose petals crushed

Instructions

Prepare

  • Add water melon chunks to the blender and make into a smooth puree. If needed, strain.
  •  Chop more water melon into small bite size cubes.

Mix & Serve

  • In a large jug or bowl, mix together cold milk, rose syrup, sugar and rose water (if using). Mix thoroughly.
  • Add the water melon juice next and mix thoroughly.
  • Add crushed rose petals, ice cubes and cubed water melon next and mix.
  • Pour the sharbat on into servings glasses. Serve!

Notes

  • Storage - Once mixed, the sharbat is good refrigerated for 3-4 hours.
  • Choose a sweet watermelon for making juice and for cubing.I don't recommend using store bought juice.
  • Since there are a lot of sweet components here - rose syrup, water melon juice & watermelon cubes, I suggest that you go a little light handed on sugar at the beginning. You can always sweeten more later.
  • Preferably, mix the sharbat right when you are ready to serve however you can prep the water melon (juice & cubes) and rooh afza milk beforehand.
  • Chop the water melon into bite size pieces.
  • You can add some green cardamom for added flavor.
  • Serve with both a spoon and sipping straw.
  • Add a scoop of vanilla ice cream or whipped cream for extra indulgent version, especially if serving to kids.
  • If you have time and wish, you can reduce the whole milk a little bit for extra flavor.Chill the milk before using.
  • For a vegan version, simply use almond or cashew milk. Dont use coconut or oat milk.
