Equipment

  • 2 mixing bowls
  • Measuring Spoons
  • Wide Skillet or Fry Pan
  • Spatula

Ingredients

For The Paneer

  • 7 oz (~200g) Paneer
  • 2 tablespoon corn starch
  • ½ teaspoon cayenne pepper/ hot red chili powder
  • 1.5 tablespoon all purpose soy sauce (not light or dark)
  • ½ teaspoon salt
  • 1 teaspoon oil
  • ¼ teaspoon black pepper
  • ¼ or ⅓ cup oil for frying, I use avocado oil

For The Bang Bang Sauce (Makes extra)

  • 2 tablespoon Mayonnaise
  • 3 tablespoon plain greek yogurt or hung curd
  • 1.5 tablespoon sriracha
  • 2 tablespoon Thai Sweet Chilli Sauce
  • ½ tablespoon fresh lemon juice
  • ½ teaspoon Salt
  • ¼ teaspoon black pepper

Foe Sevring

  • 1 jalapeno, halved and thinly sliced
  • 2 scallions or spring onions, white & green parts thinly sliced

Instructions

  • In a large bowl, add the paneer, soy sauce, cayenne, cornstarch, oil, salt and pepper. Using a soft spatula or your hands(best),combine well so that the paneer is lightly coated. Set aside for 5 minutes.
Tip:- If you feel the need, add ½ tablespoon water. The paneer should have a thin coating. It should not be dry.
  • In a large bowl, mix together mayonnaise, yogurt, sriracha, sweet chili sauce, lemon juice, black pepper and salt. Mix well and bang bang sauce is ready.Taste the sauce and adjust the spicy, sweet or tangy levels as per your liking. This recipe makes extra sauce. Reserve 3 tablespoons of sauce for serving.
  • In a wide heavy skillet, I use my 8 inch cast iron, add ¼ cup of oil,let it heat on medium low. The oil should not be hot. If you will use a larger size pan or skillet, use ⅓ cup oil.
Once the oil is hot, layer the paneer cubes using tongs. Do not overcrowd. Also, the paneer cubes should not be touching each other as much as possible- makes for crispy edges. Let the paneer crisp to brown at bottom before flipping using tongs to fry all sides till crisp and brown.
  • Drain on a paper towel and immediately add it to the bang bang sauce that we prepared. Add thinly sliced jalapeños(optional). Toss everything and serve immediately.Bang Bang paneer appetizer is ready! Enjoy it warm.

Notes

  • Keep the bang bang sauce ready before you start frying the paneer.
  • Drizzle the bang bang sauce just before serving.
  • Cut the paneer in small cubes - bite size pieces.
  • Taste and adjust the ingredient quantities in the bang bang sauce to suit your preference. .
  • The coating on paneer should be thin and not dry.
